Two Michelin Stars for L’Abysse Monte-Carlo

Just eight months after its opening in July 2024L’Abysse Monte-Carlo, a true temple of the art of sushi at the Hôtel Hermitage Monte-Carlo, was awarded two Michelin stars. Once again, Monte-Carlo Société des Bains de Mer shined in the world of gastronomy at the Michelin Guide France 2025 Ceremony, held on Monday, March 31, in Metz.

Just eight months after opening, these two Michelin stars represent a true mark of trust for Chef Yannick AllénoMaster Sushi Chef Yasunari Okazaki, and the entire restaurant team. It is also recognition of their relentless pursuit of excellence and their mastery of the art of sushi.

Master Sushi Chef Yasunari Okazaki works closely with fishermen who use targeted sustainable fishing techniques, including ikejime, a method that preserves the fish’s flesh in perfect condition. Respect for the product is essential in sushi artistry, and the menu evolves with the seasons, reflecting the freshest catches.
